Try this delicious coconut almond cookie recipe!

This delicious cookie recipe is super easy, and will be fan favorite among everyone in the family. The simplicity of this recipe makes it perfect to make with the kids. They will be able to be a part of the process and revel in their accomplishment from all the hard work they put into it.


Ingredients:


2 cups almond flour

1 cup coconut flakes (unsweetened)

2 eggs

1/4 cup coconut oil

1 cup coconut sugar

1-2 teaspoons of cinnamon

1 teaspoon of almond extract

2-3 teaspoons of vanilla extract

Pinch of salt


Other equipment:


Parchment paper

Cookie sheet


Preheat oven to 375°


Mix all dry ingredients together in one bowl. Mix all wet ingredients together into a separate bowl. Pour the mixed wet ingredients into the same bowl with the mixed dry ingredients and stir well, mixing all ingredients together.



Place the parchment paper on top of the cookie sheet. Scoop a tablespoon amount out of the batter bowl and place it on the parchment paper. When placing the scoops on the parchment paper, push them down slightly to flatten them... but not too much! Separate each scoop on the parchment paper enough so they do not expand into each other when baking.





Bake cookies for 20 minutes or until golden brown. Insert a knife into cookie to ensure it is cooked thoroughly. If the knife has raw batter residue on it bake slightly longer.







Optional:


Drizzle melted chocolate over cookies. Let sit to allow them to cool before serving.
